Moong Flour Crepes with Tomato Salad


Just when I was thinking of settling back in the comfort of a regular routine, life threw one more twist which caused a little ripple in my comforting thought process. My Son, "A" was having a tooth ache since Saturday, which grew pretty severe by Sunday to the extent that on Monday he had to miss his first day of school for an emergency dental appointment. I thought it would be a simple procedure involving cleaning up the tooth, since it did not show any signs of cavity or infection. But looked like it was much more severe than I thought and my poor baby had to get his molar taken off. Good news - There is a new one coming just underneath.

So, the dinner menu had to be modified in order for him make the chewing easier. And I thought of making these crepes which are soft, healthy, delicious and most importantly easy to make. Normally, you would serve them with any type of chutney or ketchup. But since I had some cherry tomatoes lying the the refrigerator, I thought of making a tomato salad which also included the vegetable component of my meal.

Moong Flour Crepes

Cooking time : 20 minutes
Serves : 5

Ingredients :

1 1/4 cup Moong Dal Flour
1/2 cup Rice Flour
2-3 Green Chillies
3-4 cloves Garlic
1 tspn Red Chilli Powder
3/4 tspn Turmeric
11/2 tbspn Oil
1/2 cup chopped Cilantro
Salt to Taste

Directions :

Mix all the above ingredients to form a batter which is runnier than pancake batter.
Heat a flat nonstick griddle (Tava) on the stove.
When nice and hot, gently spread one laddle full of the batter on the griddle.
Spread 1/2 tspn of oil on the sides of the crepe
Let it cook on one side for a couple of minutes till the side turn slightly brown and the crepe looks cooked
Flip it and cook it on the other side for 45 seconds.
Remove from the griddle and serve.

Once cooked, I like to roll my crepes and cut it into pieces for presentation. But you can serve them just flat.

Tomato Salad

Cooking time : 5-7 minutes
Serves : 5

Ingredients :

1 pt Cherry Tomatoes - cut into halves
2 tspns sugar
1 Green Chilli - Chopped
Few twigs of Cilantro - Chopped
Salt to Taste
Directions :

Mix all the above ingredients in a bowl and serve immediately.
