I love Saturday mornings. And especially the ones when nothing is planned for the day. Waking up late with a cup of Hot Ginger Tea made by Dear hubby is a perfect start to a Lazy Saturday.
Today, after this perfect start, it wasn't long before it was lunch time and as usual I started scouring the fridge and pantry to get some inspiration. Being a Saturday, it was as it is really late and everyone was getting hungry. It's on times like this that I feel that I should finish the cooking as soon as I wake up and not bother about serving things right off the stove. But then again, it's only on weekends that I can really serve lunch off the stove.
Also, being a weekend, the regular daal-roti-sabzi was not an option. The pantry was well stocked with different kinds of flours and pulses, but there were no real fresh ingredients in the refrigerator. Nothing was coming as an inspiration. Finally, I found some mushrooms in the fridge and some vegetable stock and thought I would make some Cream of Mushroom soup. I started getting all the ingredients, while still thinking of what would be the main.
And then something really clicked. As I melted the butter in the pan, the word "French Onion Soup" just popped in my head out of no where. I became really excited, as fortunately I had all the required ingredients.
So I made the announcement with Élan - " Today's lunch would be French Onion Soup".......
Silence......
And then...... a question - "But what is for lunch?"
Hmmm....
And suddenly the mushrooms became my saviours - Lightly Spiced Mushroom Risotto.
And this is how lunch was served at Cafe Maison on a lazy Saturday afternoon - My version of the French classics - "Vegetarian French Onion Soup and Lightly Spiced Mushroom Risotto served with finely chopped chives"
